Instructions
  1. In a heavy stock pot over medium heat, add olive oil, jalapeño peppers, onions, carrots, red peppers, celery and garlic, and sauté gently until carrots soften.
  2. Add cumin, chili powder, beans, corn, vegetable stock and tomatoes, and simmer for 10 minutes.
  3. Remove 1 cup (250 mL) of mixture and whir in blender, then return to pot.
  4. Add lime juice and cilantro, and season to taste with salt and pepper.
