In a medium bowl, stir together cottage cheese, applesauce, eggs, egg white, honey, vanilla and 1/4 tsp (1 mL) cinnamon. Stir in walnuts, raisins and cooked noodles. Pour into a greased 8-in. round pan.
Mix together remaining 1 tsp (5 mL) cinnamon plus brown sugar, and sprinkle evenly overtop.
Bake, covered, for 30 minutes or until set in the middle. Let rest, covered, for 30 minutes. Serve warm.
