  1. Heat the oil olive in a large saucepan over medium heat and sauté the onion for 1 minute. Add the mushrooms, zucchini, garlic, thyme and sage, and cook, stirring occasionally, for 5 minutes.
  2. Stir in the quinoa and chicken stock, then cover and simmer for 15 minutes.
  3. Stir in the milk and parmesan. Cover and simmer for a further 5 minutes. Serve hot.

Button, shiitake, oyster and Swiss brown mushrooms all work well with this dish.
