I’ve recently given beets another try. I’d resisted eating them for pretty much my entire life, but that had a lot to do with the fact that I was always served plain steamed beets as a child ‘ good for you, yes; but delicious tasting? Not according to my palate. Turns out there are so many other ways to enjoy beets, from smoothies, to salads, to dessert, even!

Plus, the health benefits are impressive: Drinking beet juice could help you exercise longer, according to a 2009 study published in the Journal of Applied Physiology. Study participants saw benefits after drinking two cups (500 mL) daily for six days. Beet juice has also been shown to lower blood pressure due to its dietary nitrate content.

This morning I started my day with a yummy Beet Smoothie. Here’s what was in it:
1 medium beet
1/2 cup carrot juice
1/2 cup strawberries
1/2 cup mango
