Meatless Monday: Quinoa with Marinated Tofu and Tahini Sauce

In an attempt to save money for our upcoming wedding, my fiance and I made a deal to use only ingredients we already have in our pantry and fridge – plus whatever fresh veggies are on sale at the grocery store for each meal we make.

We have mason jars full of quinoa that will definitely last us a long time, plus we had a jar of tahini and some tofu in the fridge, so we decided to throw this meal together. The only addition was some broccoli we found on sale -  and luckily it was the perfect compliment to the lemon and tahini flavours in this dish.

Ingredients

1 cup dry quinoa
1 cup broccoli, chopped

Tofu marinade

1/4 cup tamari
2 cloves of garlic, minced
1/4 cup fresh cilantro
water, to cover

Tahini sauce

1/2 cup tahini
Juice of one lemon
2 cloves garlic, minced
Salt and pepper
Water

Directions:

Combine tofu marinade ingredients in bowl. Cut tofu into 2 inch strips and let marinate in mixture for an hour or longer.

While tofu is marinating, cook quinoa.

When tofu is done marinating, add olive oil to pan on medium heat and cook until it’s browned on each side.

Steam broccoli and flavour with a squeeze of lemon juice and a sprinkle of salt and pper.

Combine the tahini sauce ingredients and add enough water to reach the desired consistency.

Add all the ingredients to a bowl, and cover with desired amount of tahini sauce.
