Meatless Monday: Easy Eggplant and Basil Pizza

As the weather gets cooler, I start to crave comfort food – casserole, mashed potatoes, and most of all, pizza.

As the weather gets cooler, I start to crave comfort food – casserole, mashed potatoes, and most of all, pizza.

A delicious (and super easy) way to satisfy a pizza craving is to grab some fresh, whole wheat dough at the grocery store, and just add your own sauce and toppings.

I picked up some fresh basil from the farmers’ market (probably the last of the season) and eggplant to make this simple, but incredibly delicious pizza.

Ingredients

2 small eggplants (or one large) peeled and sliced
1 yellow onion, diced
2 cloves garlic, minced
1 can marinara sauce (I used Eden organic)
1 fresh whole wheat or spelt pizza dough
Handful fresh basil (or a few tbsp dried basil)

Preheat oven to 450 F. On a lightly floured surface, roll out your dough. Transfer to a baking pan. Spread on your desired amount of marinara sauce.

I sauteed the onion, garlic and eggplant in a litle bit of olive oil on medium heat to caramelize them before adding them as pizza toppings.

Top everything off with a handful of fresh basil.

Cook for 10 to 12 minutes, or until desired crispiness.
